Seems like every year after Easter lunch has been eaten and my mom and I are putting all the leftovers in the fridge, I quickly notice that there is lots of leftover ham. I know what that means. Ham sandwiches for the rest of the week. Maybe even next week too. Don’t get me wrong, I love a ham sandwich. But everyday? For a week or more?
NO THANK YOU.
This year, I have ham left over and I also have pimento cheese left over from my deviled eggs which got the wheels in my little brain thinking… ham, cheese, ham, cheese, what to do, what to do…. I got it!
Ham and Pimento Cheese Stromboli
I made a pizza crust (or you could just buy one at the store), slathered it with pimento cheese, diced up the ham and layered it on top. If you want to use deli meat, just layer lunchmeat evenly over the cheese.
Roll it up jellyroll style starting on a long edge and seal all the edges real tight. Beat an egg in a bowl and brush the top of the stromboli with the egg. Bake at 375 for 25 minutes.
Sure beats ham & cheese sandwiches for a whole week! And you can dress this up too- add jalapeños, some diced peppers, or even a little bacon. I think this would be a great party food too. Like maybe your next Ranger game watching party? ;-)
