Ice Cream Pie

I’m on my way to Texas today!  I should be home in time for dinner!  There are two things I require when I go home to Texas:  Mexican food and Blue Bell ice cream.  I’ve been thinking about these two delicious foods for weeks now and when I get home I’m gonna make my family this delicious ice cream pie with Blue Bell ice cream!

Mint chocolate chip ice cream is my favorite flavor but you could  make this pie with any kind of ice cream.

I like to think this pie speaking to me.

“You lookin’ at me?”

Yeah, I’m lookin’ at you, now GET IN MY BELLY.

Serves: 6-8
Ingredients
  • 20 Oreo cookies, crushed
  • 1 T. melted butter
  • 1/2 gallon ice cream
  • hot fudge sauce
Instructions
  1. Make the crust: Stick Oreos (whole cookies, filling and all) in the food processor and crush them. Pour melted butter over the crushed Oreos and stir (or pulse in the food processor) until all the crumbs are moist.
  2. Press the crumbs into a pie pan or a springform pan and freeze for 30 minutes.
  3. While the crust is freezing, take the ice cream out of the freezer to soften.
  4. Working quickly, spread ice cream over the crust (it might not take the whole 1/2 gallon) and return it to the freezer.
  5. When you are ready to serve, warm the hot fudge sauce and drizzle over the pie. Use a warm knife to cut slices.

Thanks for coming to ST&T Kristen! I hope you like everything you taste! I make this ice cream pie often (a little too often) and it’s so fun to experiment with different flavors and different cookie crusts! Have fun!
